Fluffy Buttermilk Pancakes

These buttermilk pancakes are easy to make. They are fluffy and delicious. If you don't have buttermilk, you can make the buttermilk at home and it is easy as well. Video recipe is also included. I hope you enjoy them!
Ingredients
2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoons salt or to taste
2½ cups buttermilk
2 large eggs, room temperature
3 tablespoons unsalted butter, melted
Butter for the pan or nonstick cooking spray, etc.
Directions
Homemade buttermilk:
Combine 2 1/2 cups milk and 2 1/2 tbsp vinegar or lemon juice, mix them and let them rest. It takes about 5 to 10 minutes, or until it curdles.
Whisk flour, sugar, baking powder, soda, and salt together in a bowl. Whisk the eggs in a small bowl. Pour the eggs and half of the buttermilk into the dry mixer, stir them, then add the rest of the buttermilk and whisk them. Pour the melted butter into the mixture and whisk everything together until all ingredients are incorporated. Do not overbeat (don’t worry about the lumps; they are okay). Cover the batter and set it aside while you get ready.
Heat a large nonstick griddle or skillet for a few minutes over medium-low heat. Using a measuring cup or spoon, pour ⅓ cup of batter into the skillet or the size you want your pancakes to be.
Cook until bubbles rise to the surface and the bottom is brown, about 2 minutes or so, then flip them carefully using a thin spatula. Cook until the other sides are lightly brown. Take the pancakes and put them on a platter. Cover them with aluminum foil to keep them warm. Serve them using your desired topping.
