Spaghetti Squash Recipe
Spaghetti squash is a healthy alternative to regular spaghetti. It has a mild nutty flavor with a hint of sweetness. Can easily be mistaken for real pasta!?!
1 spaghetti squash, sliced crosswise into 1-1.2 inches rings, seeds removed
salt and freshly ground pepper to taste
1/2 tsp Italian seasonings (optional)
2 Tbsp extra-virgin olive oil
Preheat oven to 400 F
Prep your baking sheet with aluminum foil (optional) and spray with olive oil
Arrange the squash slices on the baking sheets, then brush both sides with olive oil and season them with salt, pepper, and Italian seasoning.
Bake them for about 30-40 minutes or until soft and caramelized. Make sure to turn them over halfway.
While still on the tray, use a fork gently separate the strands from the peel
Serve the spaghetti squash with your choice of toppings
