Baked Turmeric Basmati Rice

This basmati rice is fragrant, and full of flavor. It is simple and fast to make, it's ready under 15 minutes. The turmeric gives this beautiful yellow color. It's one of those dishes that you can eat by itself, or your favorite entree, YUM!

Ingredients

2 cups basmati rice

3 ½ cups boiling water

1 tsp turmeric powder

1 tbsp finely chopped fresh cilantro

2 tbsp canola oil

3 cardamom pods

½ thinly sliced onion

½ tsp minced ginger

1 tsp minced garlic

1 dry bay leaf

½ tsp salt

¼ tsp ground black pepper

Directions

Pre-heat oven to 375 F (190 C)

In the meantime, boil your water and set aside.

Heat the oil over medium-low heat, in a medium heavy-based saucepan.

Add the garlic, ginger, onion, cardamom pods, bay leaf, and saute them until the onion softened.

Add the rice and stir.

Add the turmeric, salt and pepper and stir until combined.

Add cilantro and the boiling water, stir and cover the pan.

Increase the heat and bring it to a boil, about 1 to 2 minutes. Turn the heat off.

Place the pan in the preheated oven and bake for 10-12 minutes, or until the rice has absorbed all of the liquid.

Remove from the oven and allow to sit for 5 minutes. Remove the Cardamom pods and Bay Leaf

Serve it while is still hot.
