Garlic Mashed Potatoes

These Garlic Mashed Potatoes are delicious and easy to make. They are made with infused garlic olive oil, which make the kitchen smell sooo good! This garlic mashed potatoes dish is everyone's favorite in our home. They are creamy and fluffy. For even more creaminess, use heavy cream or coconut cream instead of mill!

Ingredients

5-6 medium potatoes, peeled and diced

1/2 cup warm milk (or non-dairy milk)

3 T olive oil

2 T butter

2 garlic cloves ( peeled and diced)

1 tsp salt + 1/2 tsp(to taste)

Fresh ground black paper to taste

Directions

Place the potatoes in a large saucepan and add enough water to cover, add 1 tsp of salt to the water, and cover. Bring to a boil, over medium-high heat and then reduce heat to medium-low. Cook about 20 minute or until potatoes fall apart when poked with a fork.

Heat the olive oil and the garlic in a small saucepan over low heat about 2 minutes. Remove from heat and set aside

When cooked, remove the potatoes from the heat and drain them. Return the potatoes to the large saucepan. Start mashing the potatoes with potato masher and add the garlic oil (not the garlic), butter, fresh ground pepper and 1/2 tsp salt (to taste). Add the warm milk gradually, and stir until smooth and creamy. Let sit for few minutes so that mixture thickens and then serve.
