Shrimp Scampi with Veggies
4 Tablespoons butter 4 Tablespoons extra-virgin olive oil 4 garlic cloves, minced ½ cup chicken broth ¾ teaspoon Himalayan salt, or your choice of salt to taste 1/4 teaspoon crushed red pepper flakes to taste (optional) Freshly ground black pepper 2 pounds’ medium shrimp shelled and cleaned 1/4 cup chopped parsley (or cilantro if u like) Zest of lemon Juice of one lemon 1 cup chopped mushrooms 1 cup chopped broccoli 1 medium onion, diced Grated Parmesan cheese
In a large skillet, melt 1/2 of the butter and olive oil, then add garlic and saute about a 1 minute, add the shrimps, salt, red pepper flakes and black pepper and saute them about 2-4 minutes, or until they turn pink (make sure to stir frequently). Stir in 1/2 of the parsley and lemon juice. Transfer the shrimp in to a bowl.
Put the pan on the stove again and add the remaining butter and olive oil, now add the onion and saute it about 2 minutes, then add the mushrooms, cook them 3-4 more minutes then add the broccoli, little bit of salt to taste, black paper, rest of the parsley, lemon zest, lemon juice, and the broth. Cook them 2 more minutes and transfer the shrimps back in the pan and toss all of them together, and remove the pan from the heat.
Cook your desire pasta. Serve over pasta and sprinkle little grated Parmesan cheese.
